Good morning everyone, hope you all had a wonderful weekend. I did enjoy this weekend very much. I had a few very exciting events such as my dear friend Jacqueline’s engagement lunch and family gathering in the Saturday evening. I have been very busy organizing all sort different things as you can see and much magic has been happened in my kitchen.
As my background is Chinese, I don’t like to take the raw vegetables on my dish in general. I like it to be a bit stir fried or grilled. I know that raw vegetables offer many fiber, numerous vitamins and minerals and certainly antioxidants. My experience way back to 15 years ago when ate salad in The Westin Tai Ping Yang Hotel in Shanghai, this experience put me off with the raw vegetable. I felt like a rabbit. Don’t get me wrong; I can sometimes enjoy the natural raw salad, which is focusing on richly colored greens and with delicious dressing or dip source.
Today I would like to share with you my Monday recipe – A light and refreshing chicken salad. Sometimes the best approach is the simplest one, as in this mix of herbs, chicken, celery and beans. Add extra magic home made salad dressing.
Serve 2 persons
Half red color sweet pepper
15 slices of green beans
100 g chicken breast
4 spoon of cooking oil
1 bunch fresh basil, just the leafs
1 bunch fresh parsley leaf
5 crushed walnuts
2 table spoon of Tamari organic bio gluten free soy sauce
3 tea spoon of Aceto di Vino Bianco white wine vinegar
2 tea spoon of salt
1 ½ tsp dijon mustard
2 fresh crushed garlic
Heat up the cooking oil and place the chicken in the wok until they are slightly brown, set the chicken aside when it is cooked. Cooked the green bean on the oil, depends on what you like whether it is crisp or a bit soft. Mix the parsley and basil in the wok, sprinkle some salt and soy sauce.
Making the salad dressing: 2 tsp olive oil, ½ tsp salt, 1 ½ tsp mustard and 3 tea spoon of Aceto di Vino Bianco white wine vinegar. Mix very well.
Now place the chicken on the plate, mix them with freshly cooked herbs and vegetables. Topped with crushed walnuts if you want (keep as optional), and then sprinkle just enough dressing to coat the salad lightly. Each delicious flavor blend is a unique, and now the dish is ready to be served. It is light, and taste delicious and easy to make.
