Tomato and egg soup
Cook for 2 person
ingredients:
3 climbing French beans
2 eggs
2 teaspoons salt
2 tsp grated ginger
1 stem of green onion
3 cups of water or chicken stock
2 medium sized tomato (cut into wedges)
2 garlic clove (cut into small pieces)
3 tbsp sunflower oil
1 tsp sesame oil
1/2 grounded black pepper
Directions
1 Beat the eggs with the salt in a bowl, then leave aside.
2 Heat the wok first with medium to high fire, put the oil in the wok for one minute, then put the garlic clove, ginger in the wok, till you smell the fragrance. Before it turns the color to brown, turn the fire medium.
3 Now it is time to put the tomatoes and Climbing French Beans in the wok, stir fried it evenly with the garlic clove and ginger, and allow to simmer until the tomatoes and beans have softened, It can take about 6 minutes. Mash the tomatoes until the mixture resembles a chunky soup. Then you can add chicken stock or water in the wok, cook the water to the boiling point and turn to medium/low fire.
4 Slowly pour the egg into the soup in a steady and slow stream while continuously stirring. Let all eggs float above the soup. Add a bit salt and pepper, and drizzle in sesame oil. Divide into individual bowls, garnish with green onion, and serve.
